Mexican Bean Salad


This salad is a favourite of ours. We have found that people who do not usually eat beans or Mexican food love this healthy and tasty salad. Of course, it goes well with all of our crackers!


1 can (341mL, 12 oz) whole kernel corn
1 can (540mL, 19 oz) black beans
1 can (540mL, 19 oz) chick peas
2 green onions, chopped
4 full tablespoons parsley, chopped
½ medium size red onion, chopped
2 medium size carrots, chopped
3 tablespoons red wine vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
1 ½ teaspoons salt


Open and drain the cans of corn, beans and chick peas. Place in a bowl. Add the remaining ingredients and mix. This salad tastes best when served cold. Enjoy!
